Cook the tagliatelle verdi according to the instructions on the packet. Drain.
Gently heat the butter and add the garlic. Add the fresh cream and stilton. Heat gently until the cheese has melted.
Stir in the brandy.
Gently toss with the cooked tagliatelle and sprinkle with the pistachios.
